13th Step Dinner at Wimauma

WOW – Mama!  Or at least that’s what Wimauma should seriously consider changing their name to after showing off their culinary expertise with five amazing wine-paired courses at the Tasting Tampa 13th Step Dinner.   This newer South Tampa Restaurant came on to the scene in late 2011 and was warmly welcomed into the neighborhood of Bashore Beautiful with their modern, Southern cuisine and warm, friendly service.   Chef Gary Moran along with his wonderful wife and business partner Amy Moran are big advocates of supporting local, with most of their food being sourced as so and grown in their restaurant garden.   Dishes such as the Fried Oysters served on homemade Guacamole with Smoked Tomato jam and the Salt & Pepper Okra top our list of favorites.

I knew I was in for a treat when I saw Todd and Chef Gary discussing a 13th Step DInner.  I was actually wrong, “treat” does no justice to the meal that ensued that night.   I’ll let the pictures speak for themselves…


Chef Gary Moran is passionate about food!   He gave us a description of each course which explained where each component was sourced from and his inspiration behind the dish.

 Pickled Shrimp & Ham Salad on Fresh Tomato & Cinnamon Salsa with shredded Cabbage Slaw & Dill Oil

Fried Pickled Pigs Head Torchon with Loquat Chutney & Catalan Spinach Salad
Paired with Parducci “True Grit” Petite Syrah ’08, Mendocino, California

Bacon Crusted Mahi-Mahi on a warm Pickled Asparagus, Watercress & Hot Boiled Peanut salad with Tarragon – Grain Mustard Veloute

Paired with Fournier Sancerre ’10 Loire Valley, France


Sweet Chili- Lime glazed Pork Belly on Pickled Green Papaya salad with Crushed Peanuts & Fried Garlic

Brazin “Old Vine” Zinfandel ’10, Lodi, California

Pickled Peach & Cornbread Upside-Down Cake with Basil Chantilly & Sweet Cream Ice Cream

The night of the 13th Step dinner was also the Grand opening of the new event space and bar at Wiamuama!

Hats Off to Wiamauma for an amazing meal!  And a special thanks to Chef Gary Moran and his lovely wife Amy for the hours of hard work and labor they poured into this truly amazing dinner!
